5 layer scarecrow dip

I had no time to post these yesterday so I am posting it today. Foe last nights festivities I made a 5 layer scarecrow dip from my Betty Crocker Halloween cook book.

What you need for this is 8 oz cream cheese, taco seasoning (optional), 1 can of beans, shredded lettuce, olives, shredded cheese, triangle shape tortilla chips, salsa, cherry tomatoes.

Mix the cream cheese with the taco seasoning (which I did not do. I forgot I had used it to make tacos) and spread it on the plate. Cover the cream cheese layer with salsa and top with olives as shown above.
Sprinkle with cheese and spread the beans over the cheese.
Put your shredded lettuce all around the bean dip with shredded cheese on top and bottom.

Lastly cut a cherry tomato in half and use for eyes. Cut 2slices of olives and place them on the cherry tomato eyes. Take another cherry tomato and use for a nose. Make the mouth with 2 slices of olives and cut those slices in half to shape the mouth. Use the triangle tortilla chips to make the hat. Refer to the first picture.



Spooky spiderweb pizza



I made this recipe from my Betty Crocker Halloween cook book. Very easy and took practically no time at all. For this you will need the following: Refrigerated roll out pizza crust, pizza sauce, black olives, alfredo sauce, pepperoni, mozzarella cheese.
Preheat oven to 400 degrees.


Spray your pizza pan with cooking spray and then roll out your dough. Then pop it in the oven for 8 minutes.


After it has baked for 8 minutes take it out and place your pepperoni and olives all over the pizza about 1 inch away from the crusts edge. Sprinkle with mozzarella cheese.


Then pour your pizza sauce on top of all the toppings.
 

Next get a piping bag or plastic ziplock bag and fill it with the alfredo sauce.


Cut the tip off the bag.


Then start in the middle by making circles all inside the pizza all the way around.


Take your knife and drag it through starting from the center. This creates the web look.


Do it all around the pizza until it looks like this.


Lastly place olive slices all over as to create the look of spiders!


Place in the oven for another 10-12 mins.



Zombie lady fingers



What you will need

1 cup sugar
1 cup Butter, softened
1 Egg
1 tsp Almond extract
1 tsp Vanilla extract
2 2/3 cups Flour
1 tsp Salt
3/4 cup whole Almonds

Red or neon pink food coloring (I used neon because its more brighter)
Green and blue food coloring (I added the blue make streaks of different colored greens)
If you don't have one of the two extracts above no worries just double up on whichever one you have.

Instructions
Combine the sugar, egg, butter, almond extract, and vanilla in a bowl. Mix in the flour, and salt. Next add your food coloring into the dough mixture. I added neon green and neon blue and kneaded the dough around to create a streaking effect. DO NOT over knead or the colors will all mix into one. You want streaks. Cover and refrigerate the dough for about 30 minutes, or until it’s firm.

Preparing the almonds
Get your whole almonds and place them in a bowl. I used a teacup. If you do not have a paint brush then use a marinating brush like I did. I used a rubber bristle one. If you do not have one then just use a spoon and toss them around with the red food coloring. Remember a little dye goes a long way so don't drown them or the skin of the almond will get too soggy and wrinkle to where it peels off. When all the almonds are coated place them on a paper towel to dry.

Shaping the cookies
When you’re ready to shape the cookies, only take out a small portion of the dough at a time. Shape the cookies into fingers by rolling and working with your hands. Score the top of the cookie with a knife or spatula to make it look like the wrinkles in your knuckle. Press an imprint into the tip of the cookie with your finger to make a spot for the almond finger nail. Press an almond into the tip of each finger to look like a fingernail
.
Place on a cooking sheet lightly coated with no-stick cooking spray. I really don't think you need to spray the pan because these cookies are loaded with butter so their already lubed up for easy transfer when done. I normally use a sheet of wax paper every time anyway so you can also do that if you don't have cooking spray. Bake at 325` for 20 to 25 minutes, or until the cookies are a very light golden brown on the bottom. Let the cookies cool on a drying rack.

This is what the dough should look like if you want the different shades of green in it.


Dying the almonds a little at a time with only a few drops for each batch.

Creepy inspired Halloween dinner.



Are you ready for something gruesome? How about my meatloaf hand?! Let's start off with the ingredients shall we?


Ingredients
1/2 cup plain bread crumbs
1/2 cup milk
2 pounds mixed ground meats: beef, veal, lamb, and/or pork
1 egg, lightly beaten
1/2 cup freshly grated Parmesan cheese, optional
1/4 cup minced fresh parsley leaves
1/2 teaspoon minced garlic
Salt and freshly ground black pepper to taste
1/4 cup minced carrots
1/4 cup minced onion
Provolone cheese
Ketchup

1. Preheat the oven to 350. Soak the bread crumbs in the milk until the milk is absorbed, about 5 minutes.

2. Mix together all ingredients. Shape the meat into a hand shape. If you have a hand mold great! Use it! Otherwise wing it like I did. Bake 45 to 60 minutes.
Once I mixed all the ingredients I shaped the meat into a hand.


I then cut slices of onion and used scissors to better define the nail shapes.


To give the hand a more realistic appearance I also cut a piece of onion and placed it in the back of the hand sticking out like a bone.


Cover in ketchup.


Cut provolone cheese to the shape of the hand. This way when cooking in the oven it will melt and give it a nice bubbly burned effect.


I ate the middle finger first of course.
