Vegetarian Spinach Bacon Crepes



This recipe is pretty time consuming but once you make the crepes it's pretty much a breeze!

Crepes

1 1/2 cups milk
3 eggs
1 1/2 cups flour
2 Tbsp. vegetable oil

  Filling

3 Tbsp. butter
2 cups fresh sliced mushrooms
1/2 medium sweet onion finely diced
1/2 lb. bacon cooked and finely chopped. I used fake bacon.
1 cup chopped spinach you can use frozen but make sure it is well drained before measuring
1/3 cup crumbled feta cheese
1/2 cup Parmesan cheese
1/2 cup heavy cream


Put milk, eggs, flour and vegetable oil in blender until smooth. Make crepes however you desire and set crepes aside. You can use premade crepes too. Fry like pancakes on griddle or pan.

I used pan cooking spray and poured a small amount in the pan. Then I swirled it around in the pan to evenly distribute the batter thinly. Once one side is done you will notice it slide around on the pan. Flip and do the other side.


 This is how thin they should be. The first time I made them it was a disaster. I made them as thick as pancakes lol.


 TO MAKE FILLING: Sautee mushrooms, spinach (if using frozen add to mixture once mushrooms and onions are sautéed) and onions in 3 Tablespoons butter. Add cooked and finely chopped bacon, feta, parmesan cheese and cream. Take off heat and set aside.



I sautéed the fresh spinach, onion and mushrooms in butter though. Mmmmm...


Then it was time to add the feta, which I threw the whole thing in, cooked "bacon" and parmesean cheese.


Lastly the cream went in.


 Fill crepes with the spinach mixture and Place in a 9x13 baking pan. Bake at 350 degrees F for 15 minutes.


Oh they came out so beautiful <3


To me Crepes are like French enchiladas hehe :)
